What it is
Pliny the Elder praised a cheese from these mountains two thousand years ago, which makes Cantal a plausible claimant to the oldest in France. It is sold at three ages, and they are three different cheeses: jeune is springy and lactic, entre-deux rounded, vieux dry and almost bitter.
In the kitchen
Young Cantal is what makes truffade and aligot stretch. Old Cantal will not stretch at all — buy by age, not by name.
