What it is
An arbitration of 1277 settled a grazing dispute in the Narbona combe against the village and fixed its yearly rent to the Marquis of Saluzzo in wheels of cheese rather than coin. Its curd is pressed, broken up again, left to acidify and salted only then, which is why the paste crumbles instead of slicing.
In the kitchen
For gnocchi al Castelmagno, melt it into cream well below a simmer and off the flame; its acid curd splits the moment the sauce catches.
