What it is
One wheel of Comté drinks the milk of some thirty cows — more than any single farm could give. So Jura villages pooled their milk in fruitières, cooperative dairies, from the thirteenth century onward. The cheese exists because neighbours agreed to trust each other.
In the kitchen
Ask the age. Under twelve months it is milky and gentle; past eighteen it turns to hazelnut and brown butter, and tiny crunchy crystals appear.
