What it is
Cream is simply milk’s patience: leave it and the richness rises. Legend ties whipped cream to the château of Chantilly, where the maître d’hôtel Vatel staged feasts for Louis XIV — the name stuck to the cloud, and the cloud stuck to dessert.
In the kitchen
For whipping, everything must be cold — bowl, whisk, cream. In sauces, add it late and never quite boil it again.
