What it is
A fraction of the price of the winter black truffle and a fraction of the perfume — the flesh is pale hazelnut rather than dark, and the aroma is faint. It is honest, but it is not a substitute, and menus that blur the two are being careless.
In the kitchen
Do not cook it and do not pay winter prices. Shave it raw over something warm and fatty at the last moment.
