What it is
Golden trumpets that smell faintly of apricot, chanterelles have never been farmed — they live in quiet partnership with tree roots. Foragers speak of their spots in whispers, if at all.
In the kitchen
Never soak them — brush them clean. Butter, a little cream, and they need nothing else.
