What it is
It may be made only between 15 April and 15 November, while the herd is out on grass, and only on the farm, from the milk of one single herd. The curd sets in a gerle, an open wooden tub whose timber carries each farm's own bacteria — the appellation protects a vessel as much as a recipe.
In the kitchen
Ask for a wheel made at the height of summer and read the date on the identification plate set into the rind. Serve it in thick slices at room temperature; it is far more mineral and acidic than Cantal, and a heavy red wine flattens it.
