What it is

France distrusted it until the 1780s, when Parmentier posted armed guards around his potato fields by day — and withdrew them at night, inviting theft. The trick worked: the stolen tuber conquered the country and now bears his name on menus.

In the kitchen

Waxy varieties hold their shape for salads; floury ones collapse into the silkiest purées. Never chase both in one potato.
