What it is
It is the growing bud at the top of a palm, and harvesting it from a single-stemmed tree kills the whole plant — which is why it was long a luxury. Farmed multi-stemmed peach palms changed that: they can be cut repeatedly and regrow.
In the kitchen
Rinse tinned hearts well and dry them. The brine is assertive and will otherwise dominate whatever you dress them with.
