What it is
Louis XIV’s gardener grew some five hundred pear varieties at Versailles, racing to hand the king the year’s first perfect fruit. A pear is a rendez-vous: it is ripe for a single evening, and connoisseurs plan for it.
In the kitchen
Ripen pears on the counter, then catch them at the neck: when it yields near the stem, the whole fruit is ready.
