What it is
India has grown mangoes for four thousand years; Buddha is said to have rested in a mango grove. Indian leaders still send crates of prized varieties to neighbouring heads of state — “mango diplomacy”, sweeter than treaties.
In the kitchen
Ripe mango with chili, salt and lime is a lesson in balance; green mango, shredded, is practically a different — and equally great — ingredient.
