What it is
Golden Delicious, grown in the Limousin since the 1950s on crystalline plateaux, in orchards generally 350 to 450 m up. Cold nights and warm, sunny days there build both sugar and acid, so the appellation demands at least 12.5 °Brix, 3.7 g/L of malic acid and a firmness of 5 kg/cm², and the fruit takes a pink blush. Picked by hand, never treated after harvest and held in controlled atmosphere, it keeps its crunch until the appellation lapses, between 1 June and 1 August depending on colour.
In the kitchen
Its firm, acid-backed flesh holds its shape in a tart or sautéed in butter; cook it longer for a compote. Keep it in the fridge crisper: it has come out of cold store and softens fast in a warm fruit bowl.
