What it is
Spring’s honeycombed treasure, mysteriously fond of burnt ground — after forest fires, morel hunters follow the ash. In the Jura, poulet aux morilles et au vin jaune is less a recipe than a regional religion, the wine’s walnut oxidation meeting the mushroom’s dark perfume.
In the kitchen
Never eat them raw — their toxins die only in the pan. Dried morels often beat fresh: the soaking water, strained of grit, is half the sauce already.
