What it is
Tamogitake in Japan, where it fruits on dead elm, this yellow oyster travelled the world in grow kits and then escaped them - it now fruits wild across the American Midwest, where it is treated as an invasive species. Raw, the cluster smells closer to cashew than to mushroom.
In the kitchen
Start them in a dry pan over high heat: they hold a lot of water and the thin caps only crisp once it has gone. The yellow fades to beige in the heat, so count on them for texture rather than colour.
