What it is

The wild version is squat, brown and grows on tree stumps in winter — nothing like the pale white threads sold in shops, which are grown in the dark in high carbon dioxide to force them long and thin. Two forms of one fungus.

In the kitchen

Trim the whole clumped base off and separate the strands. Add them in the last thirty seconds of a broth.
