What it is
The best of it does not come from the pomegranates anyone eats: daru, the wild tree of the southern Himalaya, bears fruit too sour to swallow and is grown for drying alone. The arils go into the sun with their pulp still attached, which is why the spice stays tacky in the jar and clumps instead of pouring.
In the kitchen
Grind it with a pinch of the dish’s own salt or sugar, or it gums the mill into a paste. In a stuffing use it whole, crushed under the flat of a knife; in a gravy soak a tablespoon ten minutes in warm water and add the water too.
