What it is
The flavour of pastis, ouzo, raki and sambuca — and the reason they all turn cloudy with water. Anethole dissolves in alcohol but not in water, so adding water forces it out of solution as microscopic droplets. The cloud is chemistry, not a trick.
In the kitchen
Do not swap it for star anise. They share a compound but not a profile — anise is lighter and sweeter, star anise darker and more medicinal.
