What it is
One berry that tastes convincingly of clove, cinnamon, nutmeg and pepper at once — hence the English name. Columbus was looking for black pepper when he found it, which is why the Spanish still call it pimienta.
In the kitchen
It is the backbone of jerk and of most Caribbean marinades. Use the whole berries in braises and grind only what you need.
