What it is
It is made from fruit the tree loses too early: green mangoes brought down by pre-monsoon storms, sliced and dried on rooftops rather than left to rot. The slices shed about five-sixths of their weight in the sun, so what remains is acidity without water — the whole reason the powder survives in a country full of limes.
In the kitchen
Add it off the heat at the end — fried in hot oil it darkens and turns flatly bitter within seconds. A level teaspoon does roughly the work of three tablespoons of lemon juice, so start at half what you think and taste.
