A Lyonnais custard of blond chicken livers, unmoulded and sauced. Chapel inherited it and refined it into something weightless.

Why it works

Liver is mostly protein and sets hard if it is pushed; the custard is cooked in a bain-marie so the outside never gets far above the inside.
