What it is
Medieval ladies embroidered a bee hovering over thyme on the scarves of their knights — the herb meant courage. Egyptians used it for embalming; cooks use it for nearly everything that simmers.
In the kitchen
Strip the leaves by sliding your fingers down the stem against the grain. Whole sprigs can simmer and be fished out like bay leaves.
