What it is
Salvia comes from salvare, “to save” — the medieval school of Salerno asked: “Why should a man die who has sage in his garden?” In the kitchen it saved something humbler: pork, butter and beans from blandness.
In the kitchen
Fry whole leaves in butter until crisp: the butter turns nutty and the leaves become savoury chips.
