What it is
It is not a Crassostrea at all but a Saccostrea, and it needs about three years to reach sixty grams where an introduced Pacific gets there in eighteen months. New South Wales growers spent decades scraping the faster oyster off their racks as a pest, which tells you plainly what they think the extra eighteen months buys.
In the kitchen
Shuck at the hinge and tip nothing away — the first liquor carries the long mineral finish those extra years paid for. Skip the mignonette: vinegar flattens exactly the salty tail you are buying, and for some palates even lemon is already too much.
