What it is
Greeks grilled them over coals twenty-five centuries ago and argued about it in comedies. The cook’s secret has not changed since: the sweetness is in the shell — every discarded head is a spoonful of bisque thrown away.
In the kitchen
They cook in the time it takes to regret walking away — two minutes, until just pink and curled into a loose C. A tight O means overdone.
