What it is

The name is the Romagnol squaquaròn, which says its failure to hold a shape: it is sold in a tub because it cannot stand up. A Romagnol dictionary printed in 1879 already lists it, well before the DOP arrived in 2012.

In the kitchen

It is counted in days, not weeks: buy it and serve it within three. Spread it cold inside a hot piadina so it slackens without breaking, or loosen it with a spoonful of milk and use it as a cold sauce over grilled vegetables.
