What it is
At the Landsgemeinde of 24 April 1463 the citizens of Glarus voted a law requiring every maker to stamp the cones with a mark of origin — the first branded product in Switzerland. The green comes from powdered blue fenugreek, an alpine herb, and not from mould or dye.
In the kitchen
Grate it, never slice it — it is hard, dry and far too strong to eat in pieces. A teaspoon mashed into soft butter is the traditional spread; more than that and it takes over the plate.
