What it is
Bern's archives record a caravan of cheese setting out for Italy from Brienz in 1530, and the name Italian traders used for that town came back over the Alps as the name of the cheese. Before then it was sold as Spalen, after the wooden barrel it travelled in.
In the kitchen
Do not grate the old wheels: break curls off with a short blunt knife and let them warm in the hand, which is what möckli means. It has almost no elasticity, so it seasons a dish but will never string in a gratin.
