What it is
The village of Stilton never made it; it sold it, at the Bell Inn on the Great North Road, to coach passengers changing horses. The PDO now confines production to Derbyshire, Leicestershire and Nottinghamshire, so the one place the cheese is named for is the one place it may not be made.
In the kitchen
Scooping the middle out of a whole wheel dries out the rest; cut wedges from the top down instead. The last crumbs go into a celery soup, which then needs no salt at all.
