What it is
Black-skinned and nearly smooth, its warts flattened almost away — and it smells of garlic, so plainly that the trade calls it the garlic truffle. It shares its host trees with the white truffle, poplar and willow, and fills the autumn gap before magnatum is up.
In the kitchen
Treat it as a white truffle, not a black one: shave it raw over hot food at the table. Heat destroys the allium note in under a minute, and what is left underneath is faint.
