What it is
Butchers split the calf's thymus in two and sell the halves as different goods: the round thoracic lobe — the noix, or pomme — fetches roughly double the ragged throat piece that runs on from it. One calf yields one noix, so a menu that lists it whole-roasted is quietly telling you how many it bought.
In the kitchen
Degorge it three hours in cold water changed twice, blanch two minutes, peel the membrane while it is still warm, then press it overnight between two plates under a kilo. An unpressed noix steams instead of searing, and no amount of hot butter afterwards will fix that.
