What it is
The gorge is the long lobe that runs up the throat toward the jaw, and it never sets into the neat cushion the noix makes — it comes away in ragged strips. Classical kitchens wasted none of it: this is the sweetbread of vol-au-vent, financière garnish and quenelle farce, where shape stops mattering.
In the kitchen
Buy it for anything bound in a sauce, never for a whole roast. Blanch, cut into thumb-sized pieces and braise 25 minutes in stock and cream; seared hard like a noix, the strips shrink and go stringy.
