What it is
Herodotus recorded that the builders of the Great Pyramid were fed radishes, onions and garlic. The heat is a defence: crushing the cells releases an enzyme that manufactures the pungent compound on the spot, which is why a whole radish smells of nothing.
In the kitchen
Butter and salt is not a garnish, it is the recipe. The fat blunts the heat and the salt draws out the sweetness.
