What it is
A stone pine cone takes three years on the tree to ripen and gives up its kernels one shell at a time, which is why the oil is sold in bottles the size of a perfume flask. It is one of the few oils with a genuine resin note — the tree's own terpenes come through the press.
In the kitchen
Count it in drops and never heat it — a few drops on raw scallop or cured trout is a dose. Refrigerate once open; it turns within weeks.
