What it is
Its smoke point is high enough that it fries chips twice without breaking down, which is why chip shops and Chinese kitchens both settled on it. Refined, it carries almost none of the protein that triggers nut allergy.
In the kitchen
It can be strained and reused several times for deep frying, which no delicate oil tolerates. Filter it while still warm.
