What it is
Rome built roads to move them alive in snow; 19th-century New York sold them on street corners like hot dogs — the poor man’s protein became the rich man’s luxury within two generations. Each one tastes of its exact patch of sea: merroir, as winemakers would say.
In the kitchen
The old “months with an R” rule is about summer spawning, not safety — they are simply fuller and firmer in cold months. A turn of pepper beats any heavy sauce.
