What it is
Daniel Peter spent eight years failing to combine milk and chocolate — the water in milk seizes cocoa butter. His neighbour Henri Nestlé had just invented condensed milk, and the two of them solved it in 1875 by removing the water first.
In the kitchen
It burns and seizes far more easily than dark. Melt it over water that is barely steaming, never simmering.
