What it is
What is left after sugar crystals are spun out, and it was the raw material of rum and of the triangular trade. In 1919 a storage tank burst in Boston and sent a wave of it through the streets, killing twenty-one people.
In the kitchen
Blackstrap is the third boiling and is genuinely bitter. For baking you almost always want the lighter grade.
