What it is
Esau sold his birthright for a bowl of lentil stew — the most expensive lunch in scripture. The optical lens is named after this seed, not the other way round; Italians eat them at New Year, each little disc a coin of luck.
In the kitchen
Salt them only at the end — salted water toughens their skins. The little green ones from Le Puy hold their shape best in salads.
