What it is
It is a brown lentil with its skin removed, which is why it is orange rather than red and why it collapses so fast — nothing is left to hold it together. Split and skinned, it cooks in fifteen minutes and turns to purée on its own.
In the kitchen
Use it when you want it to disappear — dal, soup, a thickener. If you need lentils to stay whole, this is the wrong one.
