What it is
Grown on the basalt plateau of the Planeze de Saint-Flour since the Middle Ages, the blond lentil had all but vanished by the 1960s and came back with a Label Rouge in 2009 and an IGP behind it. Production runs to some eighty tonnes a year against six thousand for the green lentil of Le Puy - and the two are opposite tools.
In the kitchen
It slumps at twenty-five minutes, and that is the point: cook it in milk or stock for a puree or a soup. Do not build a salad on it, the grain will not hold.
