What it is
It is neither a sole nor lemony: Microstomus kitt is a dab, and the English name most likely crossed over from the French limande. The gap shows up in the price — around a third of Dover sole, and a different fish to cook.
In the kitchen
The flesh is thinner and wetter than Dover sole and collapses under a long meunière. Flour it, give it two minutes a side on the bone in foaming butter, and finish with lemon in the pan off the heat.
