What it is
Inland Akita is under snow from November and short of the sun a daikon needs to dry outdoors, so farmers hung them over the irori, the sunken hearth, and let the smoke do the drying; the bran pickling came afterwards. Gakko is simply the Akita word for pickle, and the compound name dates only from 1967, when a local maker put it on a label.
In the kitchen
Slice it thin, 2 to 3 mm — the smoke is concentrated and a thick piece tastes only of the fire. It is the one pickle that holds up against dairy: cream cheese or cold butter on rye, and it reads like bacon.
