What it is
At the Congress of Vienna in 1815, while Europe was being carved up, the diplomats held a side contest for the best cheese of their nations. Talleyrand entered Brie and won. It has been called the king of cheeses ever since — elected, unusually, by foreigners.
In the kitchen
Take it out an hour before serving. Cold Brie is chalk; at room temperature it slumps and smells of mushroom and cream.
