What it is
On 28 June 1338 Baron Albert de Sassenage signed a charter letting the people of Villard-de-Lans sell their cheese to whoever they liked; until then it had been owed to him as a due. The cheese has carried his name for nearly seven hundred years; the barons have not lasted as well.
In the kitchen
It is built from the evening milk, part-skimmed, blended with the whole morning milk, which is why the blue stays so light. Use it where a strong one would swallow the dish — a gratin, a soufflé, a leek tart.
