What it is
Savoyard monks are said to have carried the recipe to the abbey of Saint-Claude in the fourteenth century, and the farms of the Haut-Jura have made it since. Each wheel still leaves the mould with the three letters of Gex standing in relief on one face — the cheese signs itself.
In the kitchen
Its blue is faint and its bitterness real, so use it where a Roquefort would flatten everything: a thin slice melted off the heat into a Jura sauce of cream and vin jaune.
