What it is
Brittany was exempt from the gabelle, the salt tax that crushed the rest of France, so Breton dairies salted their butter freely while everyone else could not afford to. A tax boundary drawn centuries ago still divides French breakfast tables.
In the kitchen
Reduce the salt elsewhere in the recipe, especially in baking. Demi-sel carries enough to matter in a cake.
