What it is
Brillat-Savarin called it the prince of gruyères. You can identify it blind by its waist: the wheel is pressed in a beechwood hoop that curves inward, leaving a concave heel no other alpine cheese has. Summer wheels, made from cows grazing high pasture, are marked chalet d'alpage.
In the kitchen
It is the fondue cheese that refuses to string badly — it melts smooth. Rub the pot with garlic first and keep the heat low.
