What it is
The curd goes into the mould in layers, lifted by hand with a pelle à brie — a flat perforated shovel — because a pump would shear it. Some twenty-five litres of raw milk make a single wheel a little over thirty-six centimetres across, most of which then leaves again as whey.
In the kitchen
Ripe means the paste bulges but still stands. A chalky white line down the centre means another week at 10 °C, wrapped in paper — never film, which suffocates the rind.
