Huile d’argan

What it is

The tree grows nowhere but southwestern Morocco, and the kernels are still cracked by hand between two stones because no machine has managed it. Berber women's cooperatives control most of the production, which is unusual and deliberate.

In the kitchen

The culinary version is pressed from roasted kernels and is darker. The cosmetic one is raw, paler, and tastes of very little.
