What it is
Pressed from the flesh rather than a seed, which makes it one of the very few fruit oils alongside olive and palm. It also has one of the highest smoke points of any unrefined oil, which is unusual for something pressed cold.
In the kitchen
It takes a hard sear without smoking, so use it where you want high heat but a clean, buttery background.
